How To Make Tequila: VIDEO

If you love tequila, you might like to know where it comes from, and how it is made.  First off, know that all tequila is Mezcal.  Think: Scotch is Whiskey and Champagne is Sparkling Wine.  Same kind of thing.  Tequila is only authentic if it comes from one of 5 states in Mexico - Nayarit, Guanajuato, Michoacan, Tamaulipas or Jalisco (this is where the town of Tequila exists. It is the most popular area, and the site where this tequila video is shot).True tequila is made from the blue agave plant.  In the video "How Tequila Is Made...", Jose Cuervo's head jimador (blue agave farmer) shows how the 8-10 year old plants are trimmed and harvested.  The agave is, in fact, a succulent - making it a closer relative of a lilly rather than a cactus.The oval-shaped center of the plant is called a "pina" because it resembles a pineapple once the leaves are trimmed off.  The pinas were traditionally transported to the distilleries via burro, although trucks are used now-a-days. Once at the Jose Cuervo distillery, called La Rojena, the pinas are roasted, pressed and the resulting liquid is then fermented, then distilled in large copper stills.  The remaining fiber from the pressed pinas is sold off and used to make paper or rough cloth.If you are visiting Guadalajara, you can visit Mundo Cuervo and try a sip for yourself!
