Mint has grown like wild flowers in my backyard for years. So with my favorite drink’s main ingredient at my disposal, the Mojito is my go-do drink of choice to serve during backyard BBQ’s or as an afternoon refresher sitting poolside.Typically I’ve created these cocktails in their classic form using fresh mint, simple syrup, rum and topped with club soda. But, this time around, I gave my Mojitos a makeover. I scanned the fruit section while browsing Abma’s Farm here in Bergen County, and with the height of blackberry season upon us in New Jersey, I opted for these as my fruit of choice.I felt blackberries would add just the flavor and color to the cocktail that I was looking for. Also, a huge fan of bubbles, I traded in my club soda for something with a bit more sparkle: Prosecco. Continuing to browse the produce selection, I had to grab some fresh, crisp veggies to dip and enjoy while sipping my sparkling Mojito.Lia's Sparkling Mojito5 -7 Blackberriesapprox. 1/2 ounce freshly squeezed lime juice1 barspoon Agave nectar10 Fresh mint leaves, sprig for garnish2 ounces Rhum JM BlancFantinel ProseccoSqueeze half a lime in to mixing glass or cocktail shaker, drizzle agave nectar to cover. Throw in a handful of blackberries and mint leaves and muddle. Add Rhum, fill with ice, shake.Strain into an ice-filled collins glass (should be about 3/4 full). Top off with Prosecco, garnish with lime wedge and mint sprig. Cheers!
