Vodka is defined as a tasteless, odorless neutral spirit. However, those of us in the world of mixology and spirits, know that is not necessarily true. In my trainings, I have sat in on vodka seminars (including the one at BAR) where we tasted vodkas side-by-side and the difference between them is actually quite remarkable. For example, wheat based vodka produces a creamier finish, rye is a bit spicy and potato is "tangy." Each of these characteristics carries through to the cocktail created.
Some mixologists and bars have had a push-back against vodka, claiming that it doesn't really count other than to provide alcohol in a drink, but I disagree. We cannot eliminate an entire spirit category, nor do we have that right. Vodka is the number-one selling spirit in the world, which means a lot of people drink it. And, our job as bartenders is not to tell customers what to drink but rather to guide them to the best experience possible, no matter what they like.
Belvedere vodka has just released their "Intense Unfiltered" version (80 proof) and frankly, its a mixologists vodka dream. Not only does it pack a "pow" of spice on the palate but its full-bodied taste and mouthfeel are fantastic for cocktails. It is made from Diamond Dankowskie Rye, which was hailed as a "bakers grade" grain. Its not the throw-away stuff from which poor swill is derived but rather the "top of the crop," resulting in a beautifully crafted spirit.
The lovely Claire Smith is the Brand Ambassador and mixologist for Belvedere, and she created these cocktails with Father's Day in mind. Although I'm posting this review in July (American Father's Day is in June), I think they are true celebrations of the spirit and will continue to impress guests throughout the year.
Dad’s Night Off1.5 oz Belvedere Unfiltered½ oz Black pepper simple syrup¾ oz Fresh lemon juicePinch of black pepperSoda waterShake and strain into an ice filled highball glass and top with Fever Tree soda.*Infuse cracked black pepper into simple syrup overnight.
2 oz Belvedere Unfiltered¾ oz Triple syrup*¾ oz Lemon juice2 oz Strong chamomile tea½ oz Egg white*Honey, agave, sugar syrupShake and pour into a rocks glass and garnish with a lemon twist.
